1. **Choose a Ripe Mango:**
- Pick a mango that is slightly soft to the touch and gives off a sweet aroma near the stem.

2. **Wash the Mango:**
- Rinse the mango under cool, running water to remove any dirt or residue.

3. **Cut off the Stem End:**
- Place the mango on a cutting board and slice off a small portion from the stem end, creating a flat surface.

4. **Locate the Pit:**
- Hold the mango with the wider, flat side down. The mango pit is oblong, running vertically through the fruit.

5. **Slice Off One Cheek:**
- Starting from the wider side, carefully cut vertically to slice off one cheek of the mango. Repeat on the other side.

6. **Score the Flesh:**
- Use a knife to make lengthwise and crosswise cuts into the mango flesh without piercing the skin. Be cautious not to cut through the skin.

7. **Push Out the Cubes:**
- Invert the mango cheek by pushing the skin side up, causing the cubes to pop out. You can then cut the cubes away from the skin.

8. **Repeat for the Other Cheek:**
- Repeat the same process for the other mango cheek.

9. **Extract Remaining Flesh from Sides:**
- Hold the remaining mango "husk" and trim off any remaining flesh by carefully slicing along the pit.

10. **Enjoy or Store:**
- Eat the mango cubes directly or use them in salads, smoothies, or desserts. If you have any leftover mango, store it in an airtight container in the refrigerator.

Remember to handle the knife carefully and adjust the process based on your comfort and the specific variety of mango.
