🪶Cultured meat, also known as cell-based meat, is a genuine animal meat product that is created by cultivating animal cells in a controlled lab environment, eliminating the need to farm animals for food almost entirely. The process is borrowed from research into regenerative medicine. Cells are acquired from an animal by harmless biopsy, then placed in a warm, sterile vessel with a solution called a growth medium, containing nutrients including salts, proteins, and carbohydrates. Every 24 hours or so, the cells will have doubled.

✡️The sensory and nutritional profiles of cultured meat are like-for-like with conventional meat because it is made of the same cell types and structure found in animal tissue. The main challenge facing the cultured meat market is producing products at scale. But thanks to the vast amount of research in the stem cell biology space, the science behind cultured foods is not entirely new.

🧩The concept of cultured meat was popularized in the early 2000s by Jason Matheny after he co-authored a paper on cultured meat production and created New Harvest, the world's first nonprofit organization dedicated to in-vitro meat research.

Cultured meat could minimize foodborne illnesses and other diseases transmitted by animals because it’s grown in controlled conditions and without antibiotics. The FDA has ruled that cultivated meat is safe for human consumption.



Taste compared to traditional meat

🧩Cultured meat is believed to have a different taste than traditional meat. Scientists believe that cultured meat has a higher probability of containing amino acids like glycine and alanine which give a sweet sensation than amino acids like leucine and tyrosine which have a bitter aftertaste. Cultured meat tissue from chicken and cattle has significantly lower taste characteristics like umami, bitterness, and sourness when compared with traditional meat.

The flavor of cultured meat can also be influenced by the amino acids and vitamins given to cells in the lab.
