How to make a Mango Pudding
**Ingredients:**
- 3 ripe mangoes, peeled and diced
- 1/2 cup sugar (adjust to taste)
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
**Instructions:**
1. **Prepare Mango Puree:**
In a blender, puree the diced mangoes until smooth. Set aside.
2. **Mix Cornstarch:**
In a small bowl, mix the cornstarch with a couple of tablespoons of milk to create a smooth paste.
3. **Combine Ingredients:**
In a saucepan, combine the mango puree, sugar, whole milk, and heavy cream. Heat the mixture over medium heat until it starts to simmer.
4. **Add Cornstarch Mixture:**
Gradually whisk in the cornstarch mixture, stirring continuously to avoid lumps. Continue cooking until the mixture thickens.
5. **Simmer and Stir:**
Reduce the heat to low and let the mixture simmer for a few more minutes, stirring constantly to prevent sticking.
6. **Remove from Heat:**
Once the mixture has thickened to a pudding-like consistency, remove the saucepan from the heat.
7. **Add Vanilla Extract:**
Stir in the vanilla extract, ensuring it's well incorporated.
8. **Pour into Molds:**
Pour the mango pudding mixture into individual serving molds or glasses. Allow them to cool slightly at room temperature.
9. **Chill:**
Cover the molds or glasses with plastic wrap and refrigerate for at least 4 hours or until the pudding is set.
