How to make Mango Mochi

Ingredients:
- 1 cup sweet rice flour (also known as glutinous rice flour)
- 1/4 cup sugar
- 1 cup water
- 1 ripe mango, peeled and diced into small pieces
- Cornstarch or potato starch for dusting
Instructions:
1. In a microwave-safe bowl, mix together the sweet rice flour, sugar, and water until smooth.
2. Microwave the mixture on high for 2 minutes. Stir well.
3. Microwave for an additional 1-2 minutes, stirring every 30 seconds, until the mixture becomes translucent and thickened.
4. Let the mixture cool slightly.
5. Dust a clean surface with cornstarch or potato starch to prevent sticking.
6. Place a small amount of the cooled mochi mixture on the dusted surface and flatten it into a disk.
7. Place a piece of diced mango in the center of the mochi disk.
8. Fold the edges of the mochi over the mango and pinch to seal, forming a ball.
9. Repeat with the remaining mochi mixture and diced mango.
