Kalguksu - the soup with which Koreans guarantee longevity

For Koreans, there is no exact time for kalguksu. We'd think they prefer this filling hot soup on cold and gloomy days, but they adore it in any season. Kalguksu comes from antiquity on the Korean Peninsula to even get to the songs of J-Hope from the BTS phenomenon.
"Kal" means knife, and "guksu" means Asian pasta or, as we often call it, noodles/noodles. Soup is no less a phenomenon than fermented spicy kimchi cabbage and it is only a matter of time before it turns from Korean into a world culinary love. Kalguksu was a privilege for the rich in the past, because both chicken and noodle flour were prohibitively expensive for the poorer stratum. The description of such a soup was first found in chronicles of the XI century, where it was explicitly mentioned that it was food for the aristocracy of the peninsula. Representatives of the Joseon dynasty had one chef in the kitchen, specializing in preparing kalguksu. This chef was focused only on the soup and was not allowed to cook anything else. At that time, everything was prepared by hand and making the fine spaghetti, which in the East is called noodles, took time and attention. The broth for the soup, which also has its own subtleties, was again made from scratch and required constant tasting to appeal to the subtle taste of Korean royalty.
