Recipe for Turkish Kebab (Doner)

Ingredients:
For the Marinade:
- 1.5 pounds (700g) boneless lamb or chicken, thinly sliced
- 1 cup plain yogurt
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon smoked paprika
- 1 teaspoon cayenne pepper (adjust to taste)
- Salt and black pepper to taste
- 2 tablespoons olive oil
For the Sauce:
- 1 cup tahini
- 2 tablespoons yogurt
- 1 clove garlic, minced
- Juice of 1 lemon
- Salt to taste
- Water (to adjust consistency)
For Serving:
- Flatbreads or pita
- Sliced tomatoes
- Sliced cucumbers
- Sliced red onions
- Fresh parsley, chopped
Instructions:
- Marinating the Meat:
- In a bowl, mix together yogurt, minced garlic, ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, black pepper, and olive oil to make the marinade.
- Add the thinly sliced lamb or chicken to the marinade, making sure the meat is well-coated.
- Cover the bowl and refrigerate for at least 2-3 hours, or preferably overnight, to allow the flavors to meld.
- Preparing the Sauce:
- In a separate bowl, whisk together tahini, yogurt, minced garlic, lemon juice, and salt.
- Gradually add water while whisking until the sauce reaches your desired consistency. Set aside.
- Cooking the Meat:
- Preheat a grill or a large pan over medium-high heat.
- Thread the marinated meat onto skewers or use a grill basket.
- Grill the meat until cooked through and slightly charred on the edges, about 10-15 minutes.
- Assembling the Doner:
- Warm the flatbreads or pitas.
- Spread a generous amount of the tahini sauce on each bread.
- Place slices of the grilled meat on top of the sauce.
- Add sliced tomatoes, cucumbers, and red onions.
- Sprinkle with chopped fresh parsley.
- Rolling the Doner:
- Roll the flatbread or pita tightly around the fillings to form a wrap or sandwich.
- Serve:
- Slice the wrapped doner in half if desired and serve immediately.
