classic spaghetti carbonara
Here's a basic recipe for spaghetti carbonara:
Ingredients:
- 8 ounces (225 grams) spaghetti
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 4 slices of bacon or pancetta, chopped
- 2 cloves garlic, minced (optional)
- Salt and black pepper to taste
- Chopped parsley for garnish (optional)
Instructions:
- Cook the spaghetti according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining the spaghetti.
- While the spaghetti is cooking, heat a large skillet over medium heat. Add the chopped bacon or pancetta and cook until crispy. If using garlic, add it to the skillet and cook for about 1 minute until fragrant.
- In a bowl, whisk together the eggs and grated Parmesan cheese until well combined.
- Once the spaghetti is cooked, drain it and add it to the skillet with the cooked bacon (and garlic). Toss to combine.
- Remove the skillet from the heat and quickly pour the egg and cheese mixture over the hot spaghetti. Toss everything together quickly to coat the spaghetti evenly. The residual heat from the spaghetti will cook the eggs and create a creamy sauce. If the sauce is too thick, you can add a splash of the reserved pasta water to thin it out.
- Season the spaghetti carbonara with salt and black pepper to taste.
- Serve immediately, garnished with chopped parsley if desired.
