Beef Rendang Recipe
Material:
- 600 gr beef, cut chunky
- 2 stalks lemongrass, cut and crushed
- 1 galangal, sliced and crushed
- 5 kaffir lime leaves, remove the leaf bones
- 2 turmeric leaves, tied in a knot
- 1 pandan leaf, tied in a knot
- 3 bay leaves
- 8 tbsp vegetable oil
- 500 ml water
- 500 ml thick coconut milk
Ground spices:
- 5 cloves of garlic
- 7 red onions
- 5 candlenuts
- 8 curly red chilies
- 2 red chilies
- 3 cm ginger
Dried spices:
- 1 tbsp coriander powder
- 2 tsp ground white pepper
- 2 tsp ground cumin
- ¼ tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp star anise powder
- 1 tsp ground cardamom
- 1 tsp ground cloves
- 1 tsp chili powder
How to cook:
1 . Prepare the materials to be used
2. Coat the meat with all the dry spices. Leave for at least 1 hour or overnight in the refrigerator.
3. Add ground spices, herbs, galangal and lemongrass to the pan.
Add coconut milk then cook until it starts to boil.
3. Add the meat pieces, salt and a little sugar then spread evenly.
Cook over low-medium heat, stirring occasionally. This process takes a long time so that the meat is tender and all the spices are absorbed. Don't leave the spices for too long without stirring them, so that the rendang doesn't burn.
4. Cook the rendang until the spices are dark brown and the coconut milk releases coconut oil. Check the taste and continue the cooking process until the spices become thick. The time required is approximately 3-4 hours.
5. Check the taste and level of doneness of the meat. You can also serve rendang. But if you prefer dry rendang, you can continue the cooking process. The resulting coconut oil will help “fry” the meat and spices. Dry rendang will last longer in storage, suitable for stocking lunches.
6. Done, the special rendang is cooked and ready to be served.
Special Rendang Dish
It takes a long time to produce rendang. It takes at least 4-6 hours of cooking time to serve tender rendang with well-infused spices. It's not surprising that rendang has become a special food. It has become a tradition to serve rendang on celebration days. Like during Eid, it feels incomplete if you haven't eaten beef rendang.
Rendang Without Beef
In general, rendang uses beef as the main ingredient. But because the price of beef is relatively expensive, rendang can also be created with other ingredients, you know. You can use the delicious rendang seasoning to cook chicken or duck. Meanwhile, if you are on a vegetarian diet, young jackfruit, potatoes or jengkol could be an alternative. Add the main ingredients to the spices that are almost cooked. Adjust the cooking time so that the main ingredients are not destroyed.
That's the beef rendang recipe that you can try. Now it's your turn to make rendang as delicious as a Padang restaurant. We hope this recipe inspires you.
