Aglio e olio
Aglio e olio is a classic Italian pasta dish made with garlic, olive oil, and chili flakes but I used scotch bonnet and beef (it's my preference). It's a simple yet flavorful dish
that's easy to make at home. Here's a recipe for you:
Ingredients:
* 1 pound of spaghetti or other long pasta
* 1/2 cup of extra-virgin olive oil
* 8 garlic cloves, thinly sliced
* 1 teaspoon of red pepper flakes or scotch bonnet (or to taste)
* 1/4 cup of chopped fresh parsley or veges
* Salt to taste
* Grated Parmesan cheese (optional)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water
according to the package instructions until al dente.
Reserve about 1/2 cup of the pasta cooking water before
draining the pasta.
2. While the pasta is cooking, heat the olive oil in a large
skillet over medium heat. Add the garlic and red pepper
flakes or scotch bonnet, and cook for about 2 minutes, or
until the garlic is lightly golden and fragrant.
3. Remove the skillet from the heat and add the reserved pasta cooking water to the skillet. Return the skillet to medium heat and simmer for 1-2 minutes.
4. Add the drained pasta to the skillet, and toss well with the garlic and oil mixture until the pasta is coated evenly.
Season with salt and black pepper to taste.
5. Transfer the pasta to serving plates, sprinkle with chopped parsley, and add grated Parmesan cheese on top if desired.
6. Serve the pasta hot and enjoy!
